Whip Up This Cumin Rubbed Chicken With Avocado Salsa Recipe
The summer is in full swing, and you want to be serving your family healthy, nourishing meals that fit the warmer season. Gone are the days of stews and roasts; you want something that will taste refreshing but still fill you up. To help you put great food on your table, we have pulled out one of our favorite summer recipes that uses seasonal ingredients.
Pull together a delicious dinner with this great recipe for cumin rubbed chicken with avocado salsa.
To make four servings, you will need:
- 1 avocado
- 1 teaspoon of salt
- ½ teaspoon of cumin
- ¼ teaspoon of ground red pepper (plus a little more if you like it spicy)
- 4 4-ounce boneless, skinless chicken breast halves
- 1 tablespoon of olive oil
- 1 cup of chopped tomato
- ½ cup of diced cucumber
- ¼ cup of diced red onion
- ¼ cup of chopped cilantro
- 2 tablespoons of lime juice
- 4 servings of couscous or rice, cooked
Peel the avocado, halve it and remove the pit, and dice it.
In a small mixing bowl, stir together a ½ teaspoon salt, cumin, and red pepper. Rub it over both sides of each chicken breast half.
Heat the olive oil over medium heat in a large non-stick skillet. Add the chicken once the oil is hot and cook until done, about 10 minutes. (It is done when the meat is no longer pink and the juices run clear.)
In the meantime, stir together the avocado, tomato, cucumber, red onion, cilantro, and remaining ½ teaspoon of salt.
Serve the cooked chicken over rice or couscous, topped with avocado salsa. Enjoy!
