  • 4 dozen premade miniature tart shells or phyllo cups
  • 8 ounces of mascarpone cheese
  • 3 tablespoons of confectioners’ sugar
  • ½ cup of freshly whipped cream
  • 1 cup of blueberries
  • 1 pint of strawberries, sliced in half, then sliced again to create half circles

In an electric mixer, beat together the mascarpone cheese and confectioners’ sugar until smooth. Then, gently fold in the whipped cream.
On a large serving platter, arrange the tart shells of phyllo cups into six rows of eight, in a rectangular shape. Fill them with the mascarpone mixture. Top the nine shells or cups in the top left corner with a few blueberries each. On the remaining cups or shells, arrange the strawberries to resemble red stripes, leaving half of the mascarpone exposed to reveal white stripes.
